Fife Bakery, an all natural, organic artisan bakery specializing in naturally leavened breads made from local ingredients, is set to open a production facility and small retail counter in Olympic Village.
Projected to open late June/early July, Fife Bakery will prepare “old school bread, with a long fermentation time and lots of complexity,” says founder/owner Felix Yau.
Different variations of bread, including crusty loaves with a slightly sour taste and rustic ciabatta will be up for grabs.
While Fife Bakery will focus primarily on wholesale products (selling to restaurants and local shops), Yau says that the bakery will also boast a small retail counter for the public to purchase bread and filtered drip coffee.
To begin with Yau will focus his baking on bread solely. Down the line he may expand the menu to include more delicate baked goods. Pastries require “a lot more equipment and people,” remarks Yau.
At 2,500 square feet, Yau has plenty of room to play with. Yau told Vancity Buzz that he’ll only be using about half of the space, which will be divided into a baking production side (with an attached retail section) and storage. As for the rest of space, if all goes well, Yau has big expansion plans.
