Vancouver’s food truck scene has been taking portable eats to the next level for a few years now, and while there are all kinds of kebabs, burgers, hot dogs, and tacos flying out of cart and truck windows all over town, there’s still nothing quite like a sandwich.

Here are five must-try sandwiches found on food trucks in Vancouver.

Kaboom Box: Hot Smoked Salmon Sandwich

One of Vancouver’s longest-running food carts, the Kaboom Box is a fixture in downtown and at farmers’ markets, and known for their use of fresh, local ingredients in sandwiches and salads. They’ve got a great Hot Smoked Salmon Sandwich (or “Salmwich” as its known), which features fresh-smoked wild caught OceanWise salmon on a toasted whole wheat bun with a touch of spicy mayo and house-made maple-mustard slaw.

Yolk’s Breakfast: Poached Free-Range Egg Sandwich

Customize your breakfast sammy from the Yolk’s truck, and take in any of several fantastic directions. Pair one or two poached eggs with either Hollandaise or aged white cheddar. A single egg goes on an English muffin (or a hashbrown), while a double can go on a Ciabatta bun (gluten-free bread available, too). Add your choice of double smoked bacon, honey ham, or portobello mushroom for the ultimate good morning (or midday) sandwich experience.

Fat Duck Mobile Eatery: Duck Confit Philly

There’s a Philly cheesesteak, and then there’s a Philly cheesesteak made with duck confit. You’ll find the latter on the menu at the Fat Duck Mobile Eatery. It’s soft bread toasted with a schmear of duck fat, spread with a truffle Parmesan mayo, then loaded with shredded duck confit, marinated mushrooms, pickled onions, and topped with Swiss cheese.

Blue Smoke BBQ: The Juicy Lucy

The newest addition to the Blue Smoke BBQ roster is this heavy hitter. Their Juicy Lucy is a custom blend of meats sliced off a meatloaf with nuggets of cheese on a brioche, coleslaw, secret sauce, Bread & Butter pickles, crispy dry onions. Extra napkins are a must.

Though it’s hard to go wrong with a classic grilled cheese from Mom’s truck, they have an indulgent sweet side of the menu. The highlight is the Fat Elvis, which is a grilled peanut butter and banana sandwich with a sprinkle of smoked sea salt on white bread. Make sure to add bacon to take it to that next level of Elvis-style indulgence.
