Forest to table pop-up restaurant to deliver a foraged feast

For one night only, a culinary collaboration by Chef Jefferson Alvarez, Swallow Tail Culinary Adventures and Le Vieux Pin Winery will take place in Vancouver to celebrate the winery’s 10th Anniversary and Swallow Tail’s spring-foraged ingredients.

The event, which is to be held on June 13 in a secret location in Chinatown, is dedicated to British Columbia’s beautiful terroir and all the unknown wild products hidden in the region’s forested terrain.

Eight fabulous courses by Chef Jefferson Alvarez (most recently of Gastown’s Secret Location) will be presented featuring a range of edible, nutritious, foraged food. Dishes will include wild plants and other foragables including lily of the valley, chicken of the woods (soft fleshy mushroom), reindeer moss, elderflowers, lady ferns, and Douglas fir. A varied selection of local wild meats will also be on the menu, expertly cooked by Mark Hills.

Alvarez is one of the very few chefs that actually goes into the wild himself to harvest ingredients, and as such assures diners that they are guaranteed “a very unique experience.” The event will “give people a taste of our local wild ingredients that are often seen but not recognised”.

The pop-up restaurant’s dinner plates will be paired with complementary wines from Le Vieux Pin and LaStella, which have been carefully chosen to bring out the unique flavours produced in the dishes prepared by Alvarez.

Those interested in attending this forest-to-table event will have to purchase tickets online. Only then will the address be announced. Tickets are available until they sell out, so be sure to reserve ahead of time.
