The pop up trend has hit Fairmont Hotel Vancouver with the return of The Roof restaurant on the 15th floor, scheduled to open Friday, February 14 and operate through the fall.

The room, named in honour of the panoramic view, casts north to Snow-capped coastal mountains and south to Point Grey peninsula and Strait of Georgia and with the re-opening, can be enjoyed over breakfast, lunch, afternoon tea and dinner. The sunken bar boasts views of the city skyline with a list of libations reminiscent of Mad Men days and for the big spender, a Grand Sazerac cocktail made with Louis XIII cognac. Open from 11:30 a.m. to midnight, the lounge has cozy banquettes and overstuffed wing back chairs making it an ideal location for liaisons, lunch deals or a sunset rendezvous with live entertainment on Thursday, Friday and Saturday evenings.

Executive Chef Cameron Ballendine has returned to Vancouver from his tasty globe trotting travels that took him to kitchens in China, Egypt, United Arab Emirates, and France. But home is where the heart is, and the west coast is where he is laying his chef’s hat. Now in place as the top toque at Fairmont Hotel Vancouver, he oversees the culinary operation and is putting a contemporary twist on the cuisine in the “new” Roof restaurant.

Dinner is the showpiece and, with a nod to its storied past, is best described as a Grill Room. Starters include classics like oysters, French onion soup, and Boston bibb wedge salad along with new offerings like tempura morels. The signature prime rib and Yorkshire pudding is a hotel favourite and a variety of steaks, from an 8-ounce tenderloin to a 24-ounce porterhouse, can be ordered – all certified Angus beef. Other menu items include pork or lamb chops, grilled free range chicken and BC seafood, with side dishes of creamed spinach, cauliflower gratin and sautéed mushrooms. Desserts range from sweet to savory with lemon tart, chocolate cake, crème brulee, or artisanal cheeses.

A classic venue that debuted when the hotel opened in 1939, the room became a national icon known for its dinner and dancing, and put Dal Richards on the music map. Dal and his 11-piece big band got their foot in the door on May 1, 1940 for a six-week gig, and played for 25 years. The Roof was also an unconventional studio for CBC Radio who aired a weekly show from under the green copper roof for many years.

The Fairmont Hotel Vancouver turns 75 in 2014, and a $12 million lobby renovation will provide the grand dame, a designated heritage building, with a sense of renewed luxury. Newly appointed general manager, Michael Pye, returned to his birthplace to oversee the project. “Vancouverites have had a love affair with the hotel since it opened and it’s surprising how often we receive stories about the memories guests have of the property and our staff. The temporary opening of The Roof will introduce a new generation to the venue and, we hope, new memories to share.”
