I was doing a juice cleanse last week, and the shopping list for the three day cleanse asked for 12 lemons. I ended up using about four lemons, so I’ve been researching recipes I can use the lemons for. First up is Lemon Scones. Here is the pin that got me going.
This recipe is pretty easy. It takes about 10 minutes to get the dough together, which is about the same amount of time it takes my oven to preheat.
2 cups all-purpose flour
1/4 cup sugar
1/4 tsp salt
2 tsp baking powder
6 tbsp unsalted butter, chilled
1/2 cup milk
1/4 cup lemon juice
zest of one lemon
1 cup frozen blueberries or dried fruit (optional)
Preheat oven to 400 degrees F.
Mix dry ingredients.
Cut butter into dry ingredients.
I used a food processor to incorporate the butter. You can also mush the butter into the dry ingredients with your hands, or use two forks to incorporate the ingredients. Mix until the mixture is the size of pea-sized crumbs.
Add the milk, lemon juice and zest into the mixture and mix until combined. It’s VERY important not to over mix. It’s extremely easy to over mix and end up with tough scones. Pour out the mixture on to a floured surface or on a non-stick mat.
At this point, you can add your frozen or dried blueberries. Then shape into a one inch thick disk and cut into eight pieces, or if you need to bring some to the office, you can cut the disk into more pieces.
Bake for about 25 minutes or until golden brown.
My scone isn’t as fluffy as the picture in the original pin and I also forgot to add blueberries. But it still tastes pretty delicious!
