If you frequent the Stadium-Chinatown SkyTrain station and love breakfast you can probably just skip this article and go about your day. More than likely you’ve already visited Yolk’s, the baby blue breakfast oasis on the corner of Beatty and Dunsmuir. Get off at a different station? Lost when it comes to all the Vancouver food carts? Love breakfast? Too many questions? If you answered ‘yes’ to any of these, keep reading.
As the name suggests, eggs are Yolk’s specialty. The staple of their menu is a poached, free-range egg sandwich in three varieties:
- double smoked bacon and arugula
- hand-cut honey ham with spinach and house Dijon
- roasted Portobello mushroom, arugula and pepper aioli
All three come with a wet nap and a truffle-lemon hash brown skewer. I repeat, a truffle-lemon hash brown skewer! They are just as decadent as they sound. And yes, the sandwich is served with a wet nap. A regular napkin just wouldn’t do, as the first bite will cause your egg to leak like Uncle Paul’s Pontiac. You might even want to wear a bib.
You can’t beat the double smoked bacon and arugula with either hollandaise or a slice of aged cheddar. The locally smoked bacon, rich farm fresh egg and tart arugula creates a perfect flavour storm that redefines the simple egg sandwich. Breakfast doesn’t get all the glitz and glamour of fancier meals — and while wet naps aren’t usually reserved for fine dining — this Vancouver food cart will leave you thinking differently.
Other gourmet menu items include buttermilk pancakes with maple whipped cream, hot mulled apple cider and the ever-revolving daily special. Depending on the day Yolk’s could be serving:
- tiramisu pancakes
- banana bread French toast
- a rib-eye steak and egg sandwich
- chicken and waffles
Don’t be afraid of the chicken and waffles either. If you are new to this southern comfort food, Yolk’s is a great place to start. They make the waffles fresh, the chicken is tender and the blend of sweet maple syrup, homemade chicken gravy, fluffy waffles and savoury fried chicken is a breakfast revelation. It might sound strange but I’m sure sushi sounded pretty strange once upon a time.
During the winter, Yolk’s will be parked on the corner of Beatty and Dunsmuir from 8:30 a.m. to 1:30 p.m. on Thursdays and Fridays and from 10 a.m. to 2 p.m. on Sundays. They will also be at the Vancouver Winter Farmers Market at Nat Bailey Stadium for the remainder of the February Food Cart Fest. When not sleeping, prepping or cleaning they are also available for private bookings.
